Zucchini Apple Bread

A new, healthier twist on a classic zucchini bread recipe. This is supremely moist and yummy breakfast bread. Even our pickiest eaters couldn’t get enough of it.

Ingredients:

3 eggs 1 cup of applesauce 1 cup white sugar 1 cup brown sugar 4 small zucchinis (washed and grated) 3 teaspoons vanilla 1 1/2 cups white flour 1 1/2 cups whole wheat flour 1 teaspoon salt 1 teaspoon baking soda 3 teaspoons cinnamon 1/4 teaspoon baking powder 1/2 cup chopped walnuts 1 cup golden raisins

Directions:

  1. Preheat oven to 350℉.
  2. Prepare to bread pans by spraying with cooking spray (or using Crisco).
  3. Clean and trim ends off of the zucchini.
  4. With a grater (or food processor), grate all zucchini.
  5. In the same bowl, add eggs, applesauce, and vanilla.
  6. Set aside.
  7. In a large mixing bowl, combine remaining dry ingredients.
  8. Stir.
  9. Pour wet ingredients into the dry ingredient bowl.
  10. Combine completely.
  11. Pour batter evenly into the bread pans.
  12. Bake for 1 hour.
  13. Remove and let rest for at least 5 minutes before cutting and serving.
