Banana Bread with Flax

When my son was little, he loved bananas!  (One of the very few things he actually would eat.)  I had to make sure that there were always bananas in the house.   It didn’t take long before I found out that a little kid can only eat so many of them and I had brown bananas.  Instead of tossing them, I came up with this a yummy, moist banana bread recipe that my son still loves! Ingredients: 1 1/4 cups sugar 1/2 cup butter, softened and cubed 2 eggs 5-6 very ripe bananas 4 Tablespoons water 2 Tablespoons buttermilk powder 1 teaspoon vanilla 1 teaspoon baking soda 1 teaspoon salt 1 1/4 cup wheat flour 1 1/4 cup white flour 2 Tablespoons ground flax seed Directions:
  1. Preheat oven to 350 degrees.
  2. In a mixing bowl combine the sugar and the butter. Mix until fluffy.
  3. Add in the eggs.  Mix until fluffy.
  4. Add in bananas, mix again until bananas are completely mushed into the mixture (no lumps)
  5. Add water and vanilla.  Mix on low to incorporate.
  6. In a separate bowl, combine the remaining dry ingredients.
  7. Combine your wet and dry ingredients into one bowl and mix until completely incorporated.  Set aside.
  8. Prepare your loaf pans (2) with a good coating of cooking spray (or coat with Crisco)
  9. Divide your batter equally into the 2 pans and place in preheated oven.
  10. Bake for 50-60 minutes until a knife comes out clean from the center of the loaf.
  11. Cool for a few minutes before cutting.
